5 Minute Breakfast Recipes

Breakfast is known as the most important meal of the day.  It gives you energy, concentration, and helps you maintain a healthy body weight.  We all have skipped breakfast more than we should.  Here are some easy, yummy recipes that you can whip up in 5 minutes or less for those mornings that you're running late for work.  No more missing the most important meal of the day! 

Microwave Breakfast Flatbread Pizza

What You Need:
1 EGG, beaten
1 Tbsp. milk
2 Tbsp. fully cooked breakfast sausage crumbles, or fully cooked sausage link or patty
1 round flatbread (6-in diameter) 
2 Tbsp. shredded cheese

Directions:
BEAT egg and milk in 2-cup cereal bowl until blended. ADD sausage.  MICROWAVE on HIGH 30 seconds; push cooked edges toward center. MICROWAVE until egg is almost set, about 15 to 45 seconds longer.  CUT egg into 4 or 5 pieces; arrange on flatbread. TOP with cheese.  MICROWAVE an additional 10 to 15 seconds to melt cheese. SERVE immediately.

Bagel Gone Bananas

What You Need:
2 tablespoons natural nut butter, such as almond, cashew or peanut
1 teaspoon honey
Pinch of salt
1 whole-wheat bagel, split and toasted
1 small banana, sliced

Directions:
STIR together the nut butter, honey, and salt in a small bowl.  SPREAD the mix out evenly on both halves of the bagel.  TOP with bananas. 


Frozen Fruit Smoothie

What You Need:
2 cups frozen berries or fruit
2 Tbsp. orange juice concentrate (or 1/2 cup orange juice)
1/2 cup water
1/2 cup yogurt1 frozen banana
1 Tbsp. honey

Directions:
ADD all of the ingredients into a blender and BLEND until completely smooth.

Ham and Egg Breakfast Bowl

What You Need:
1 think slice of deli ham
1 EGG, beaten
Shredded cheese

Directions:
LINE the bottom of 8-oz ramekin or custard cup with ham slice, folding ham in half, if necessary. POUR egg over ham. MICROWAVE on HIGH 30 seconds; stir.  MICROWAVE until egg is almost set, 15 to 30 seconds longer. TOP with cheese and serve immediately. 

Breakfast Crostini

What You Need:
1/4 of a baguette, sliced in half lengthwise
1/2 cup ricotta
1 Tbsp. honey
1 cup strawberries, sliced

Directions:
COMBINE ricotta and honey. SPREAD evenly over the baguette slices.  TOP it with sliced strawberries.  Ricotta can also be replaced with cream cheese.
