They may not be "in season", but pumpkin bars are downright delicious. Here's how to make them!
2 14-oz. packages of pumpkin quick bread mix
1 1/4 cups oil
1 teaspoon pumpkin pie spice
1 15-oz. can of pumpkin
2 cups powdered sugar
1/3 cup margarine or butter, softened
1 3-oz. package of cream cheese, softened
1 tablespoon milk
1 teaspoon vanilla
1. Heat oven to 350°F. Spray 15x10x1-inch baking pan with cooking spray. In a large bowl, combine all bar ingredients; stir until dry mix is moistened. Spread batter evenly in greased pan.
2. Bake at 350°F. for 25 to 35 minutes or until toothpick inserted in center comes out clean. Cool for about 45 minutes.
3. In small bowl, combine all frosting ingredients and beat until smooth. Spread over cooled bars. Store in fridge.
