Add Fruit To Your Summer

Fruit is a refreshing food to eat during summertime.  But are you getting tired of just eating your fruit plain?  Why not try something different?  Here is a list of easy, delicious, and refreshing recipes containing fruit that you can try to whip up yourself at home.

Fruit Salsa

Cinnamon Crisps
10 flour tortillas (10")
Cooking spray
⅓ cup sugar
1 teaspoon cinnamon
Fruit Salsa
2 granny smith apples
1 lemon
2 kiwis
1 lb strawberries
½ lb raspberries
1 tablespoon brown sugar
3 tablespoons preserves (I used raspberry)

Cinnamon Crisps
Preheat oven to 350 degrees. Combine cinnamon & sugar. Set aside.
Working with 3 tortillas at a time, spray both sides of of the tortilla and sprinkle each side lightly with cinnamon sugar.
Stack 3 tortillas and using a pizza cutter, cut tortillas into 12 wedges. Place on a baking sheet and bake 8-11 minutes or until crisp.

Fruit Salsa
Zest the lemon and set aside. Peel and finely chop apple, squeeze 2 teaspoons lemon juice over apples and mix well to combine.

Finely chop strawberries and kiwis. Gently combine all ingredients, the raspberries will break apart a bit but that's what you want. Allow to sit at room temperature at least 15 minutes before serving.

Healthy Strawberry Frozen Yogurt
4 cups frozen strawberries
3 Tablespoons agave nectar or honey
1/2 cup plain yogurt (non-fat or full fat)
1 Tablespoon fresh lemon juice

Add the frozen strawberries, agave nectar (or honey), yogurt and lemon juice to the bowl of a food processor. Process until creamy, about 5 minutes.  Serve the frozen yogurt immediately or transfer it to an airtight container and store it in the freezer for up to 1 month.

Banana Split Bites
12 1" pieces pineapple
1 banana cut into bite-sized pieces (make sure your bananas aren't too ripe)
6 medium sized strawberries, cut in half
2.5oz dark chocolate
1 teaspoon coconut oil
Chopped nuts or coconut (optional)

Cut fruit and assemble into stacks.  Press a popsicle stick through the fruit and freeze until solid.  Prepare a baking sheet with parchment paper.  Melt the chocolate along with the coconut oil on the stove-top or in the microwave, stirring frequently to prevent burning. Once completely melted, remove the frozen fruit from the freezer.  Dip the fruit in the chocolate, let the excess drip off and then place on the sheet to harden.  If desired, dip the chocolate covered side immediately in chopped nuts or coconut before placing them on the sheet to harden.  Once the chocolate is completely hardened, remove from the sheet and place in an airtight container to store in the freezer until ready to serve.

Fresh Fruit Popsicles

1 peach, cut into 1/2-inch slices (1/2 cup) 
2 kiwis, peeled and sliced into 1/4-inch rounds
3/4 cup strawberries, finely chopped
1/2 cup blueberries
1/2 cup raspberries
1 1/2 to 2 cups of fruit punch or 100-percent white-grape juice

1. Combine fruit in a mixing bowl, and arrange the mixture into 8 3-ounce popsicle molds.
2. Pour enough juice into each mold to just cover fruit.
3. Insert popsicle sticks and freeze until solid (about 6 hours).

Banana Cheesecake Watermelon "Pizza"

1 round slice of watermelon, about 1½ inch thick
4 ounces vanilla greek yogurt
4 ounces low fat cream cheese
¼ cup powdered sugar (optional)
4-5 strawberries, sliced
1 banana, sliced
¼ cup white chocolate chips
¼ cup chopped pecans

Using an electric mixer, mix together greek yogurt, cream cheese, and powdered sugar until well combined. Set aside. Place your watermelon on a large plate/platter. Spread cream cheese mixture over watermelon, like a "pizza sauce". Top with banana slices and strawberries. Sprinkle on the pecans and white chocolate chips. Cut into slices (like pizza slices) and serve cold. Enjoy!
